Chai Gingerbread Cookies

These cookies were a happy little accident when I didn't have all the spices I needed to make gingerbread cookies! They are super yummy and hit ya with a bit of spice!

Well, I was short on ground ginger and realized I didn't have cloves that the recipe I was using called for…so these were born! I had grand plans of icing them…but never got around to it. I made the first half of the batch in the shape of gingerbread men but they were all eaten before I had a chance to photograph them…the second half I just used a small mason jar lid as a cookie cutter to make neat circles. Everyone loved them!

Just made another batch of hearts for Valentine's Day and added a simple glaze!

Also tasty for making an ice cream sandwich!
