In June I visited Washington, DC. My friend Kyle took me to grab a bite at this place called Roti. It's pretty much a Mediterranean Chipotle. Anyway, they had a crazy good selection of drinks: I tasted the White Peach, Vanilla Bean, Green Tea and decided that it would be super delicious as an ice pop. It was a bit too sweet and thick as a drink in my opinion. But so I'm trying it out as an ice pop! I used about a 1/2 cup of green tea, poured in about 3/4 of a cup of peach nectar, and added some vanilla extract and vanilla beans. Each of my popsicle holders held about 1/4 cup and I was making 5, so I adjusted my ingredients to make 1 1/4 cups of liquid. I added probably about a teaspoon of sugar while the liquid was still hot to sweeten it a bit (after a taste test). Pour your liquid into your popsicle holders (whether they are actual molds or just dixie cups with popsicle sticks stuck in). Freeze! I suggest minimum time as four hours, but just leave them overnight if you can. They came out really yummy! I tried them out this morning with my mom and we both agreed they were just sweet enough for our liking!
