 My mom went gluten-free following a gluten sensitivity diagnosis a few years back and since then finding the perfect way to celebrate her birthday has been a repeated case of trial and error. We've made gluten-free ice cream cakes, pies, cupcakes– you name it! They've all been good and served their purpose, but this cake is definitely the winner.
A decadent chocolate layer cake with a special secret ingredient in the frosting (pumpkin puree!) makes this cake super yummy and somewhat healthy.  Our last day in India…so sad to leave. We visited a laundering facility, one of United Dry Goods' factories, and an embroidering facility before making our way to the airport.
 From a sunrise walk to awesome bird sightings to monkeys to cave temples to a fabric exporter, and finishing it off with a village visit– day thirteen was a good one.
 Today we said goodbye to Erode and started our trip back to Bangalore by way of Tirupur and Yercaud.
 Today we woke up in Erode and had a non-stop day. With visits to the SSM Institute of Textile Technology & Polytechnic College, SSM Processing Mill LTD, Sri Cheran Synthetics India Limited, and Green Land Textile Printers, we were definitely exhausted by the end of it!
